A 7" rim should have 4 1/4" or 4 3/8" back spacing. That's what the originals were, depending on which wheel you're talking about. Anywhere from 4" to 4.5" will be fine, there's plenty of room for wider rims and tires. 14x7 is correct for a 235/70x14 tire. If you want a wider tire a 245/60x14 fits the 14x7 rim nicely too.
