Shaun. I know you have been doing a lot on your car.
Get all your running gear finished first, car can't be driveable unless you do that.
If body work is going to be done before you plan t drive it do it next, or if you want to be able to drive it then work on your wiring so you can start it up.

Replacing the wiring depends on your budget and what you plan to do to the car. I replaced all my wiring under the hood since it was in bad shape from all the heat. I did not replace the dash harness, but thinking about doing that since I have had so much trouble trying to get all my gauges working correctly.

Interior is the last thing I did to my car. I worried about getting all the mechanically and paint done first.
