I went 632, but the rest of the car will support it. My advice is get something your comfortable working on and can afford to fix if something breaks. The same I say about boats. I have a 45' Tripple Engine ( 540's 650hp ea ) Cigarette boat, lots of fun, but expensive to run too. Pocket has to support whatever route you go.At the minimum I would go 502. Nothing exotic and some good power platforms and options out there.
Nothing like opening the hood, and the engine compartment is stuffed full of big block power. Stick with a single carb engine. Tunnel Rams and dual carbs are a pain to run on the street. Did that with a 427 back in the day. It looks cool, but can be a pain in the butt. There used to be some streetable carb/intake packages with dual 450 holleys on a tunnel ram if you want to try that route.
