Default Creamy Apple Bacon Chicken

Heres a new one that turned out incredible, and for those of you trying to slim down the waist a bit, it has less than 8 carbs in it per serving, this will make technically 3 servings, but I eat it in 2

First you slice up an apple into 1/4 inch slices. Then put 2 tbsp's off oil into a pan, I use olive oil, and then brown the apples in the pan. You dont want them soft, The firmer the better, but get some brown to them. Then remove the apples and put them off to the side

Then dump another tbsp of oil or even bacon grease into the pan, and now put 1 pound of cubed fresh boneless chicken breast in the pan and begin browning that. Once you get it browned, pour 1/4 cup of white wine in the pan to deglaze along with 1/4 cup of apple juice, 1 cup of heavy cream and a teaspoon of fresh thyme. Mix it all together in the pan and let it simmer until the liquid is reduced and almost gone.

Then make some bacon strips, 3 or 4 is plenty (I only use turkey bacon because of the no fat no carb content) and crumble the bacon up.

Put down a bed of browned apples, put the chicken over the top and put the crumbeled bacon over the top of that and you have an amazing meal.

This can even be done without the apple. If you are unsure how to decently brown an apple, I would recommend skipping it, as a mushy, oily apple isnt as good as a firmer browned apple, but I wouldnt say they are bad.

If you want to impress that special someone, it makes a great looking plate, with the red of the apples and beautifully browned chicken and the thyme. She will think you really went out of your way and it really only takes about 20 minutes
