My van was doing the same thing. Heating up climbing hills. I think it was just years of junk in the cooling passages in the heads. Once they were acid dipped it cut that out. I did put in a lower temp T-Stat as well. 195 to a 185.
A t-stat that dont open completely up will do that. It has enough flow to dissipate the heat under normal circumstances. But under higher load and heat it isn't flowing enough for that.
I just throwing ideas out there. It is a fishing expedition until you actually solve it tho.
